Coconut Chicken

Hey y'all. I'm still alive! I fall in and out of blogging, apologies. Today, I have a new recipe that we love in my house! It's coconut chicken, adapted from this coconut lime chicken recipe found here . Ingredients shown above: One yellow onion, diced 2 cloves of garlic, miced Coconut milk Tumeric Salt Pepper Black beans Coconut oil Rice Chicken thighs Not shown: chicken broth. First I warmed the coconut oil in the pan. My stove gets hot really quickly, so I tend to cut everything first. I use about this much. It's probably about a tablespoon and a half. I use a lot at one time for this because I don't end up adding more to the pan.  Diced garlic and onion. Once the oil is hot, add the chicken. Season with salt and pepper. Cook on each side for about 3-5 minutes. The chicken won't be fully cooked when you remove it from the pan, but that's fine.  Here I've added the onion to the pan. Sauteed for about 2 m...

Bratwurst

Tonight for dinner we had brats. Simple, quick, easy. Unfortunately, I don't have any picture for you, but I think you'll find that these are easy to do on your own. Firstly, poke holes in them. You don't want them to explode on you as they heat up. They will, so make sure to poke holes on both sides! Forks are great for this. Next, I put my oven on broil. This heats them up quicker and cooks them faster. You're probably supposed to move the rack, but I don't. I generally leave the rack in the middle. This seems to work for me. I've found that all sides of the food cook evenly this way. I don't know. When I put it on broil, I set it on high. I think you can probably use a low setting, but I assume that this would take a bit longer. I don't use the broil setting very much. Spaghetti

Hey y'all. Tonight I made spaghetti for dinner. Sounds simple right? Well let me tell you. I'm about to brag a bit because it is freaking delicious.  Here's the deal. I love to dress up my sauce. Anything that will compliment a tomato flavor usually goes in, in moderation. I've made spaghetti so many times, but I like making it a little differently each time.  One of my new favorite things is adding steamed vegetables to the sauce. It gives it much more substance and sticks with you longer, plus you're getting vegetables without the overwhelming vegetable taste! LASAGNA

Two recipes in a day?? ALRIGHT. As the title suggests, I made a lasagna tonight. I followed a recipe (of course), but now that I know basically what's in it and the baking temp and all the particulars, I would say I could come up with one on my own. I will definitely let you know how it goes. Anyhow, here's what went down. Pasta sauce, canned tomatoes, garlic (between the pasta sauce and tomatoes), parmesan, mozzarella, ricotta, ground sausage, and lasagna noodles! The great thing about these is that they were no boil which was a definite time saver!  First things first, preheat your oven to 375.  I always brown meat with chopped onion and garlic. It's just personal preference.  Browned meat!  These are the tomatoes going in.  Mix those together and let them simmer to thicken.  Aww yeah!  While that was simmering and thickening up, I cracked two eggs into a bowl and whisked them so they wer...

Quick Meal! Tacos

Alright, so here's the deal. I'm struggling with this blog a bit, because I get all of my recipes online. I am having a hard time seeing why I should blog about it here, if it already exists on the internet somewhere else. See the dilemma? If you want me to continue, then I definitely will! Just let me know what you want. I don't generally come up with recipes on my own, so that's why I turn to the internet for inspiration.  Anywho.  I don't have pictures for this, but I think you'll get the idea.  One meal that my family loves  is tacos. We do build your own style. The whole process takes me about 20 minutes, maybe.  First, I preheat my oven to about 225-250. I wrap my tortillas in foil and stick them in. I don't set a timer. They'll come out right at the end, even after the table has been set. This gets them super warm and super soft. Holla!  I use 1lb. ground beef. Brown it up. Add in a packet of taco seasoning, and it's good to go! Whil...

Tomato and Sausage Pasta

A new recipe! Finally... This recipe comes from Lil Luna's blog . I've made this twice now, once to try and once requested. My family LOVES this stuff. It's super easy and super delicious! I found this recipe on pinterest, which is where I find 99% of my recipes.  Here we go.   Ingredients:  1. Parmesan cheese (1c) 2. Garlic (3 cloves) 3. Heavy whipping cream 4. Pasta  5. Italian sausage 6. Salt (I used garlic salt) 7. Pepper  8. Basil  9. 2, 14.5 oz canned tomatoes First, I chopped the garlic and onion.  I poked holes in my sausage so they wouldn't explode. These are sweet Italian, but you can use any kind you want.   Added them to a heated pan with olive oil.  Added the onion and garlic to the pan.  Meanwhile, get that pasta boiling!  Once the sausage are mostly done, I removed them from the pan, chopped them up, and added them to a different pan to continu...
