Tomato and Sausage Pasta

A new recipe! Finally...

This recipe comes from Lil Luna's blog. I've made this twice now, once to try and once requested. My family LOVES this stuff. It's super easy and super delicious! I found this recipe on pinterest, which is where I find 99% of my recipes.

Here we go.

 Ingredients:
1. Parmesan cheese (1c)
2. Garlic (3 cloves)
3. Heavy whipping cream
4. Pasta
5. Italian sausage
6. Salt (I used garlic salt)
7. Pepper
8. Basil
9. 2, 14.5 oz canned tomatoes

First, I chopped the garlic and onion.

I poked holes in my sausage so they wouldn't explode. These are sweet Italian, but you can use any kind you want.

Added them to a heated pan with olive oil.

Added the onion and garlic to the pan.

Meanwhile, get that pasta boiling!

Once the sausage are mostly done, I removed them from the pan, chopped them up, and added them to a different pan to continue cooking all the way through.

While those were cooking, I chopped and added tomatoes into the first pan. I had a picture, but apparently it went missing.

After I added the tomatoes, I added parmesan, salt, and heavy cream. I forgot to add the pepper and basil, but go ahead and put those into the first pan as well. Keep that heated until it thickens up a bit.

Mix it up! Once the sausage were done, I added those back into the pan with the sauce.

Mmmmmmm.

Once the pasta was done, I drained that, like usual. I added the sauce in with the pasta, mixed, and served.

Added a little parmesan on top for garnish, and VOILA! The dish is done!

I hope you enjoy this recipe! It's not terribly time consuming, and you don't dirty many dishes making it either!

Ingredients:
1lb Italian sausage                         2, 14.5oz cans Italian style stewed tomatoes, chopped
1c parmesan, shredded                  Heavy whipping cream
Salt                                               Onion, chopped
Garlic, 3 cloves                              Basil
Pepper                                          Pasta, your choice
Olive oil

Directions:
1. Cook pasta according to package directions.
2. Chop garlic and onion.
3. Heat oil in a pan, and poke holes in the sausage.
4. Once the pan is heated, add the sausage, garlic, and onion.
5. Chop the stewed tomatoes. I added one can of the juice and drained the other. Feel free to add both cans of the juice or none! I liked the extra flavor for the sauce.
6. Once the sausage were mostly cooked through, I chopped them, then put them in a different pan to finish cooking. It's difficult for me to tell when they're in with everything, so that's why I separated them.
7. Add parmesan, salt, pepper, and basil to the pan with the onions, garlic, and tomatoes.
8. Add in heavy whipping cream. The original recipe calls for about 1.5c, but I just eyeballed. I stopped adding it when the sauce and color looked good to me.
9. Continue heating the sauce to allow the cream to thicken a bit.
10. Add sausage back into the sauce. Continue cooking for a few minutes.
11. Once the sauce is at the desired consistency, add to pasta!
12. Garnish however you please, and enjoy!

Coconut Chicken

Hey y'all. I'm still alive! I fall in and out of blogging, apologies. Today, I have a new recipe that we love in my house! It's coconut chicken, adapted from this coconut lime chicken recipe found here . Ingredients shown above: One yellow onion, diced 2 cloves of garlic, miced Coconut milk Tumeric Salt Pepper Black beans Coconut oil Rice Chicken thighs Not shown: chicken broth. First I warmed the coconut oil in the pan. My stove gets hot really quickly, so I tend to cut everything first. I use about this much. It's probably about a tablespoon and a half. I use a lot at one time for this because I don't end up adding more to the pan.  Diced garlic and onion. Once the oil is hot, add the chicken. Season with salt and pepper. Cook on each side for about 3-5 minutes. The chicken won't be fully cooked when you remove it from the pan, but that's fine.  Here I've added the onion to the pan. Sauteed for about 2 m...

Bratwurst

Tonight for dinner we had brats. Simple, quick, easy. Unfortunately, I don't have any picture for you, but I think you'll find that these are easy to do on your own. Firstly, poke holes in them. You don't want them to explode on you as they heat up. They will, so make sure to poke holes on both sides! Forks are great for this. Next, I put my oven on broil. This heats them up quicker and cooks them faster. You're probably supposed to move the rack, but I don't. I generally leave the rack in the middle. This seems to work for me. I've found that all sides of the food cook evenly this way. I don't know. When I put it on broil, I set it on high. I think you can probably use a low setting, but I assume that this would take a bit longer. I don't use the broil setting very much. Once the sausages are in the oven, I cook them on each side about 8-10 minutes. You'll want to cut them open and check to make sure they're cooked all the way through befo...
