Quick Meal! Tacos

Alright, so here's the deal. I'm struggling with this blog a bit, because I get all of my recipes online. I am having a hard time seeing why I should blog about it here, if it already exists on the internet somewhere else. See the dilemma? If you want me to continue, then I definitely will! Just let me know what you want. I don't generally come up with recipes on my own, so that's why I turn to the internet for inspiration. 

Anywho. 


I don't have pictures for this, but I think you'll get the idea. 


One meal that my family loves is tacos. We do build your own style. The whole process takes me about 20 minutes, maybe. 


First, I preheat my oven to about 225-250. I wrap my tortillas in foil and stick them in. I don't set a timer. They'll come out right at the end, even after the table has been set. This gets them super warm and super soft. Holla! 


I use 1lb. ground beef. Brown it up. Add in a packet of taco seasoning, and it's good to go! While the meat is browning, I chop up the lettuce. Good ol' iceberg for these people. Give it a rough chop. 


Then I dice up some roma tomatoes. You can really use any tomatoes you like, romas are just generally the cheapest and tastiest for us. Put those bad boys into a bowl. 


Light sour cream straight from the container. Give it a mix, add a spoon, plop it onto the table. 


Shredded cheese (cheddar usually) goes into a bowl. Salsa and any other hot sauces go onto the table with spoons. 


By the time this is done, your meat should be done. I put that in a bowl, add a spoon, and put that on the table. 


At this point, everything is ready. Dinner plates and forks are on the table, so the last thing is the tortillas. I take them in their foil packet out of the oven and plop those onto a plate, still in the foil. We generally will keep them in the foil for the whole meal to keep in all the heat. 


And that's it! It's super simple, quick, and easily versatile! You can make as much or as little as you want, and they're always a hit! 





What you'll need: 

1lb. ground beef                           Sour cream
1 packet taco seasoning               Lettuce, shredded or chopped
Shredded cheddar cheese            Tomatoes, diced 
Salsa, your choice                        Tortillas, your choice 

1. Preheat oven to about 225-250. Something low. We're just trying to warm up the tortillas, not bake them or cook them in any way. Wrap tortillas in foil. Set them on the rack. 

2. Brown your beef. Once it's brown, add in the taco seasoning. This will usually call for 3/4c of water and the packet. Let it thicken by sitting on a medium heat. 
3. Chop up lettuce and tomatoes. I dice the tomatoes and chop up the lettuce. Feel free to shred the lettuce. 
4. Put everything into separate bowls. I usually keep the sour cream in it's little container. 
5. Remove tortillas from the oven. 
Done! 

This may seem like a recipe that's too simple to post, but it's a class in our house! It's very easily changed. Add or subtract any ingredient you want to fit the likes/dislikes of your families!

Coconut Chicken

Hey y'all. I'm still alive! I fall in and out of blogging, apologies. Today, I have a new recipe that we love in my house! It's coconut chicken, adapted from this coconut lime chicken recipe found here . Bratwurst

Tonight for dinner we had brats. Simple, quick, easy. Unfortunately, I don't have any picture for you, but I think you'll find that these are easy to do on your own. Firstly, poke holes in them. You don't want them to explode on you as they heat up. They will, so make sure to poke holes on both sides! Forks are great for this. Next, I put my oven on broil. This heats them up quicker and cooks them faster. You're probably supposed to move the rack, but I don't. I generally leave the rack in the middle. This seems to work for me. I've found that all sides of the food cook evenly this way. I don't know. When I put it on broil, I set it on high. I think you can probably use a low setting, but I assume that this would take a bit longer. I don't use the broil setting very much. Once the sausages are in the oven, I cook them on each side about 8-10 minutes. You'll want to cut them open and check to make sure they're cooked all the way through befo...
