Cheeseburger Macaroni

What you'll need: 
1. Shredded cheese! Yum. 
2. Butter
3. (In the plastic bag) flour
4. Beef broth
5. Taco seasoning
6. Rotel
7. Elbow mac
8. Ground beef (not pictured..?)

Directions: 
1. Brown the beef. This looks horrid, but I promise, it gets better. 
2. Add taco seasoning.
3. Add rotel, juice and all. SO yummy. 


                                        
4. Add beef broth. (I used two cans, about 10.5oz each.) 

5. Pop in the elbow mac and give it a nice stir. 


Pop a lid on and let simmer for 15 minutes. In the meantime...


6.Melt the butter. I used 3 tbsp, the recipe calls for 2...
7. Add 3tbsp of flour into the pot. Stir until thick and fragrant. 
8. Add milk. I'm not actually sure how much I used because I just added more until it was at the consistency that I liked. I would say maybe about 1.5c in all? 


10. Whisk it all together. 


11. Add in the shredded cheese! Again, I don't know how much I used. I just kept adding until it was to my liking. Feel free to do the same. 

12. Add salt and pepper to taste. 
13. Combine! (I can never get my cheese sauce to look like theirs...but it's tasty nonetheless!)

Let me know what you think! It's a bit spicy, but cheesy, hearty, beefy, and DELICIOUS. 



Ingredients: 
1lb. ground beef
8oz elbow mac (I always use a bit more, I LOVE LEFTOVERS!) 
1 can rotel, not drained
1 packet taco seasoning 
Salt/pepper 
3tbsp butter/flour 
Shredded cheese
Milk 
Beef broth (20 oz, I used about 21-22oz)

Directions:
1. Brown beef. 
2. Add rotel, taco seasoning, and beef broth. Let simmer a bit. 
3. Add noodles. Bring to a boil then cover and let simmer for 12-15 minutes. 
4. In another saucepan, melt butter over medium/low heat. Add flour and whisk together. It should turn into a thick, paste-like consistency. 
5. Add milk and whisk until thick and smooth. 
6. Add cheese. 
(I did 5 and 6 until I was happy with how the sauce came out. Add as much/little as you like!)
7. Season with salt/pepper to taste. 
8. Combine.

Coconut Chicken

Hey y'all. I'm still alive! I fall in and out of blogging, apologies. Today, I have a new recipe that we love in my house! It's coconut chicken, adapted from this coconut lime chicken recipe found here . Ingredients shown above: One yellow onion, diced 2 cloves of garlic, miced Coconut milk Tumeric Salt Pepper Black beans Coconut oil Rice Chicken thighs Not shown: chicken broth. First I warmed the coconut oil in the pan. My stove gets hot really quickly, so I tend to cut everything first. I use about this much. It's probably about a tablespoon and a half. I use a lot at one time for this because I don't end up adding more to the pan.  Diced garlic and onion. Once the oil is hot, add the chicken. Season with salt and pepper. Cook on each side for about 3-5 minutes. The chicken won't be fully cooked when you remove it from the pan, but that's fine.  Here I've added the onion to the pan. Sauteed for about 2 m...

Bratwurst

Tonight for dinner we had brats. Simple, quick, easy. Unfortunately, I don't have any picture for you, but I think you'll find that these are easy to do on your own. Firstly, poke holes in them. You don't want them to explode on you as they heat up. They will, so make sure to poke holes on both sides! Forks are great for this. Next, I put my oven on broil. This heats them up quicker and cooks them faster. You're probably supposed to move the rack, but I don't. I generally leave the rack in the middle. This seems to work for me. I've found that all sides of the food cook evenly this way. I don't know. When I put it on broil, I set it on high. I think you can probably use a low setting, but I assume that this would take a bit longer. I don't use the broil setting very much. Once the sausages are in the oven, I cook them on each side about 8-10 minutes. You'll want to cut them open and check to make sure they're cooked all the way through befo...
