Stuffed Peppers

These are the most delicious stuffed peppers. Seriously. They're always a hit with everyone. You can modify the recipe to fit your needs as the filling makes a lot. A lot a lot. Feel free to add in spicier salsa, jalapenos, etc. to kick up the spice a notch. This is a very versatile recipe so do some experimenting!


Here's what you need: (from L - R)
1. Vegetable oil. I prefer olive oil but it's pretty expensive.          
2. (In the back) Garlic salt                                                             
3. Black pepper                                                                              
4. Golden corn                                                                                
5. Black beans                                                                                
6. Ground turkey
7. Taco seasoning 
8. Bell peppers
9. Onion
10. Rice 
11. Shredded cheese
12. Salsa

Phew. Let's start! 
Cut 'em and gut 'em! 


Place in a shallow baking pan. 

Sorry this is sideways, how do you change it?
Drizzle with the oil. This works best if you have a smaller opening so you can put your thumb over it and get an even spread.

Put in the oven at 400F for 25 minutes. 

Meanwhile...



Cut up that onion! These are sort of big-ish pieces, but make them smaller if you wish. 


Sautee them in the pan! I waited until they were a bit brown on the edges. 


Pop the turkey in and brown it up together with the onions. 


Season to taste. However you wish. 

Meanwhile...again. 


This is actually rice.
Start cooking the rice. 



Drain the corn and black beans. 

In a separate bowl, combine the turkey, black beans, and corn. 

Add in the taco seasoning. I used half the packet but add in as much/little as you wish. 


Add in the salsa! 


Once the rice is finished, throw that in, too! At this point, your filling is done. 


Fill the peppers as much as you can. (They've been removed from their initial 25 minutes in the oven.)

Back into the oven at 400F for 15-20 minutes. 


Put some cheese on top and place back in the oven until the cheese is melted. 

Garnish however you feel!

Corn, drained
Black beans, drained
1lb. ground turkey
Taco seasoning (I used 1/2 a packet, but you can add more or less to your liking)
Bell Peppers
Onion
Rice
Shredded Cheese
Salsa

Directions: 
1. Preheat your oven to 400F.
2. Cut and gut your peppers. Place in a shallow baking pan. 
3. Drizzle with olive oil. 
4. Bake in oven for 20-25 minutes. 
Meanwhile...
5. Dice the onion. Sautee in pan and then brown the turkey in same pan. 
6. Combine beans and corn in a bowl. Add turkey and onions. 
7. Cook the rice and add to the bowl. 
8. Add salsa and taco seasoning to bowl to taste. 
9. Stuff peppers. 
10. Bake at 400F for 15-20 minutes. 
11. Add cheese on top. Place back in oven until cheese is melted.

Hey y'all. I'm still alive! I fall in and out of blogging, apologies. Today, I have a new recipe that we love in my house! It's coconut chicken, adapted from this coconut lime chicken recipe found here . Bratwurst

Tonight for dinner we had brats. Simple, quick, easy. Unfortunately, I don't have any picture for you, but I think you'll find that these are easy to do on your own. Firstly, poke holes in them. You don't want them to explode on you as they heat up. They will, so make sure to poke holes on both sides! Forks are great for this. Next, I put my oven on broil. This heats them up quicker and cooks them faster. You're probably supposed to move the rack, but I don't. I generally leave the rack in the middle. This seems to work for me. I've found that all sides of the food cook evenly this way. I don't know. When I put it on broil, I set it on high. I think you can probably use a low setting, but I assume that this would take a bit longer. I don't use the broil setting very much. Once the sausages are in the oven, I cook them on each side about 8-10 minutes. You'll want to cut them open and check to make sure they're cooked all the way through befo...
